This copper tubing is quite cold (from the freon changing state from a liquid to a gas), and has a fan blowing air over the fins, and into the room being cooled. Actually, if the A/C is left on too long, sometimes it will form some "ice crystals" on the coils.
Physically, the "Evaporator" portion of the A/C is the "finned" portion, with copper cooling coils, inside the A/C between the fan and the room being cooled.
The room being cooled is not acting as an "evaporator".
